Coconut Toffee (Pol Toffee)

 



Ingredients:

  • 250g desiccated coconut
  • 300g white sugar
  • 100ml water
  • 30g butter
  • 1 tbsp milk powder
  • 1 tsp vanilla essence
  • A pinch of salt
  • Food coloring of your choice

Instructions:

  1. First, grind the desiccated coconut finely using a grinder. Add sugar to the grinder and blend together (this helps the sugar dissolve faster).
  2. Prepare a tray by greasing it with butter and set it aside. Also, grease a knife with butter for later use.
  3. In a non-stick pan, add sugar and water. Cook on low heat, stirring continuously, until the sugar completely dissolves and starts bubbling.
  4. Once the sugar syrup starts to bubble, add the ground coconut mixture and stir well.
  5. Mix in the vanilla essence, milk powder, and a pinch of salt. Stir continuously.
  6. As the mixture thickens, add the butter and keep stirring.
  7. If using food coloring, add it at this stage and mix thoroughly.
  8. Continue stirring until the mixture thickens and forms a single mass when stirred (this takes about 30-40 minutes).
  9. Once it reaches the right consistency, quickly transfer it to the prepared buttered tray and flatten it evenly.
  10. After about a minute, score the mixture with a greased knife to mark pieces, but do not separate them yet.
  11. Let it cool for 1-2 hours until fully set, then cut into pieces and enjoy!
