Coconut Toffee (Pol Toffee)
Ingredients:
- 250g desiccated coconut
- 300g white sugar
- 100ml water
- 30g butter
- 1 tbsp milk powder
- 1 tsp vanilla essence
- A pinch of salt
- Food coloring of your choice
Instructions:
- First, grind the desiccated coconut finely using a grinder. Add sugar to the grinder and blend together (this helps the sugar dissolve faster).
- Prepare a tray by greasing it with butter and set it aside. Also, grease a knife with butter for later use.
- In a non-stick pan, add sugar and water. Cook on low heat, stirring continuously, until the sugar completely dissolves and starts bubbling.
- Once the sugar syrup starts to bubble, add the ground coconut mixture and stir well.
- Mix in the vanilla essence, milk powder, and a pinch of salt. Stir continuously.
- As the mixture thickens, add the butter and keep stirring.
- If using food coloring, add it at this stage and mix thoroughly.
- Continue stirring until the mixture thickens and forms a single mass when stirred (this takes about 30-40 minutes).
- Once it reaches the right consistency, quickly transfer it to the prepared buttered tray and flatten it evenly.
- After about a minute, score the mixture with a greased knife to mark pieces, but do not separate them yet.
- Let it cool for 1-2 hours until fully set, then cut into pieces and enjoy!
