Potato Rice

 



Ingredients:

  • 4 cups of cooked rice
  • 1 large potato (diced)
  • 1 small onion (chopped)
  • 3-4 spring onions (chopped)
  • 4 dried chilies (chopped)
  • 4 cloves of fried garlic (crushed)
  • 3 fried shallots
  • 1 small piece of cinnamon
  • ½ tsp cumin seeds
  • ½ tsp turmeric powder
  • ½ tsp chili powder
  • Salt to taste
  • 3 tbsp vegetable oil

Instructions:

  1. Heat oil in a large pan and add the diced potatoes. Sprinkle a little salt and turmeric powder, mix well, and let them fry. Cover and cook for about 4-5 minutes until golden and tender.
  2. Add chopped onions, cumin seeds, fried garlic, fried shallots, cinnamon, and chopped dried chilies. Stir-fry for a few minutes.
  3. Add chili powder and salt to taste. Increase the heat and add the cooked rice. Mix everything well.
  4. Finally, add the chopped spring onions, stir well, and serve hot.
