Potato Rice
Ingredients:
- 4 cups of cooked rice
- 1 large potato (diced)
- 1 small onion (chopped)
- 3-4 spring onions (chopped)
- 4 dried chilies (chopped)
- 4 cloves of fried garlic (crushed)
- 3 fried shallots
- 1 small piece of cinnamon
- ½ tsp cumin seeds
- ½ tsp turmeric powder
- ½ tsp chili powder
- Salt to taste
- 3 tbsp vegetable oil
Instructions:
- Heat oil in a large pan and add the diced potatoes. Sprinkle a little salt and turmeric powder, mix well, and let them fry. Cover and cook for about 4-5 minutes until golden and tender.
- Add chopped onions, cumin seeds, fried garlic, fried shallots, cinnamon, and chopped dried chilies. Stir-fry for a few minutes.
- Add chili powder and salt to taste. Increase the heat and add the cooked rice. Mix everything well.
- Finally, add the chopped spring onions, stir well, and serve hot.
